Even though HACCP has been with us for some time now, it still poses challenges to the food industry. Perhaps the main one being the challenge of creating a valid, detailed yet concise system which delivers practical protection against food safety issues. We still see systems which are confused and inaccurate, many of which pass muster at audit.
The templates, and worked examples created by Kassy and her team at Techni-K provide a cost effective solution for creating a best practise HACCP system.
After delivering HACCP training programmes across a wide range of food manufacturing sites over many years, I often see the same weaknesses. The most obvious being vaguely defined hazards and the continued confusion between validation and verification. The level of detail driven into the system should encourage HACCP teams to really challenge their food safety controls.
The precision and detail included within the prewritten example hazards should really help HACCP teams address this key weakness. Vaguely defined hazards lead to vague controls! A unique point of the hazards analysis templates is that they recognise the, often overlooked, fact that assessment of severity is typically much more consistent than the assessment of likelihood. For example, the severity of a piece of metal is typically medium and constant. It is the likelihood of the metal entering the product and actually reaching the consumer which varies. These hazard analysis templates also enable the reasoning for scores to be captured, this is vital in ensuring that the decisions made can be justified when challenged. The real test of a HACCP system is its ability to stand up to scrutiny and of course, deliver a consistently safe product.
Validation remains a challenge for many HACCP teams, the templates provided around this area will introduce structure and lead teams through this potentially complex area. The additional guidance supplied in the form of fact sheets will prove invaluable to businesses to ensure the information they based their decisions on is robust.
Concluding with the training and review tools, the system will encourage businesses to make HACCP relevant and meaningful for those involved in its management and keep the system up to date.
